So, in 1997 I was living in a walk in closet in the bachelor apartment of my friend, Ed Rittenhouse. We didn’t do a whole lot of grocery shopping. With mostly ate on the fly. It was San Francisco, so we could walk down any street an grab a burrito from one of dozens of taquerias in the neighborhood.

One day, Ed was at his sewing machine and I was shuffling around the apartment doing nothing. We were both hungry, but too lazy to go out. I went into the kitchen and looked in the fridge to see what I could make us to eat. All I saw was a light bulb and a box of Arm and Hammer. I checked the cupboards and freezer and found some rice, a frozen chicken and some canned vegetables. I got to work.

I defrosted the chicken in the microwave, cooked it up with some vegetables and rice. I honestly can’t remember what exactly I made but when I told Ed that dinner was ready, his jaw dropped. He said, “Where did you get all that food? “. I said “It was in there. You just have to know where to look.” As we eat our delicious meal, Ed kept commenting on the fact that I had just made a feast out of practically nothing. I said “Hey, it’s just cookin’ with what cha got.”

That was truly the birth of this blog, even if I didn’t know it at the time. The idea is that, you can make a fabulous, inexpensive meal from what you have just sitting in the fridge and your cupboards.

Now, I’m not really here to teach anybody how to cook. You should already know how to do that. As they say, “If you can read, you can cook.” (I don’t know who “They” are either. I’m just sayin’.) I’m just here to share with you all what I whipped up in the kitchen.
